🧂 Ingredients:

  • 4 salmon fillets
  • Salt, pepper, paprika, garlic powder (to taste)
  • 2 tbsp butter
  • ½ cup chopped onions
  • ⅓ cup sun-dried tomatoes (in oil, drained)
  • 1 cup chopped spinach
  • 1 cup heavy cream
  • 2 oz cream cheese (room temp)
  • ½ cup chicken stock
  • ½ cup grated parmesan cheese

🔥 Instructions:

Season salmon generously with salt, pepper, paprika & garlic powder.

In a hot cast-iron skillet, melt butter and sear salmon until blackened on both sides (about 3–4 minutes per side). Remove and set aside.

In the same skillet, sauté onions and sun-dried tomatoes for 2–3 minutes.

Add in chopped spinach and cook until wilted.

Pour in heavy cream, then stir in cream cheese, chicken stock, and parmesan. Let simmer until thick and creamy.

Return salmon to the skillet, nestling into the sauce. Let everything cook together for 5 more minutes.

Garnish with extra parmesan and serve hot!
