- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery and cook, stirring occasionally, until softened, about 5 minutes.
- Stir in the garlic, thyme, rosemary, and red pepper flakes (if using) and cook for 1 minute more.
- Add the white wine and cook, scraping up any browned bits from the bottom of the pot, until the wine has reduced by half, about 5 minutes.
- Pour in the chicken broth and crushed tomatoes and bring to a boil. Reduce heat to low and simmer for 20 minutes.
- Stir in the heavy cream, lobster meat, crab meat, and shrimp. Season with salt and pepper to taste.
- Heat through for an additional 5 minutes, or until the seafood is warmed through.
- Taste and adjust seasonings as needed.
- Ladle the bisque into bowls and garnish with chopped fresh parsley. Serve with warm garlic ciabatta bread.
Tips:
- For a richer flavor, you can use lobster bisque instead of chicken broth.
- If you don’t have cooked lobster, crab, and shrimp, you can use 2 pounds of your favorite seafood combination.
- Be sure to chop the cooked seafood into bite-sized pieces.
- You can adjust the amount of red pepper flakes to your desired level of spice.
- Leftover seafood bisque can be stored in an airtight container in the refrigerator for up to 3 days.
