Creamy Tomato Pasta (With or Without Chicken)

🍗 For the Chicken (Optional):
- 2 boneless chicken breasts
- Salt, pepper, garlic powder, paprika (or your fave seasoning)
- Olive oil for searing
🍝 For the Sauce & Pasta:
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3–4 garlic cloves, minced
- 2 tbsp all-purpose flour
- 1 cup chicken or vegetable broth
- 1 cup heavy whipping cream
- ½ cup tomato sauce
- Salt, pepper, Italian seasoning to taste
- 8 oz pasta (penne, rigatoni, or fusilli work great)
👩🍳 Directions:
Cook Chicken (Optional):
Season well and cook over medium heat for ~4 minutes per side until golden and juicy. Remove and slice.
Boil Pasta:
Cook according to package instructions. Drain and set aside.
Make the Roux & Sauce:
In a large skillet, heat olive oil. Sauté onions and garlic until fragrant.
Stir in flour and cook 1 min to form a roux. Gradually whisk in broth, then cream.
Add tomato sauce and seasonings. Simmer 5–7 min until thickened.
Combine:
Toss cooked pasta into the sauce. Add chicken (if using). Stir until coated.
Serve Hot:
Top with Parmesan or red pepper flakes if desired. Pair with a cold beer or wine.
