With just a generous seasoning of salt and pepper, a handful of fresh veggies, and a little oil, this dish comes out flavorful, juicy, and perfectly roasted—no water, no fuss. Salt and Pepper Baked Chicken (With Juicy Veggies!)

📋 Ingredients

  • 4–6 bone-in, skin-on chicken thighs or drumsticks
  • 1 tbsp coarse salt (or to taste)
  • 1 tbsp freshly ground black pepper (or to taste)
  • 1 large onion, sliced
  • 1 bell pepper (any color), sliced
  • 2 tbsp avocado oil (or olive oil)

👩‍🍳 Instructions

1. Prep the Chicken

Pat chicken pieces dry with paper towels.

Place them in a large mixing bowl or baking dish.

2. Season Generously

Sprinkle a generous amount of salt and pepper on both sides of the chicken.

Add sliced onions and bell peppers.

Drizzle with avocado oil (or olive oil).

Massage everything together to coat evenly.

3. Bake

Preheat oven to 400°F (200°C).

Cover your baking dish with foil.

Bake for 30 minutes, then flip the chicken pieces and bake for another 30 minutes.

Remove foil, flip once more, and bake uncovered for 15 minutes to get that golden brown, crispy top.

4. Serve

Spoon the natural juices and roasted veggies over the chicken.

Serve with rice, mashed potatoes, or crusty bread to soak up all that goodness.
