  • 2.5–3 lbs bone-in, skin-on chicken thighs or drums (cleaned & patted dry)
  • Avocado oil (for drizzling)
  • 2 tbsp butter
  • 1/2 red bell pepper, finely diced
  • 1/2 green bell pepper, finely diced
  • 1/2 small yellow onion, finely diced
  • 1 tbsp minced garlic
  • 3 cups jasmine rice
  • 3 cups water
  • 1 tbsp Better Than Bouillon
  • 2 tsp tomato bouillon powder
  • Fresh parsley, finely chopped (for garnish)

Seasonings

  • Creole seasoning
  • Garlic powder
  • Onion powder
  • Paprika
  • Sergio’s Golden Steer seasoning (or all-purpose seasoning)
  • 1 packet Sazon (achiote & culantro)

Step-by-Step Instructions

1. Season the Chicken

Place chicken in a large bowl.

Add Creole seasoning, garlic powder, onion powder, paprika, Sergio’s seasoning, and Sazon packet.

Drizzle generously with avocado oil and massage seasonings into the chicken until fully coated.

2. Sear the Chicken

Heat a large-bottomed pot over medium heat.

Add a light drizzle of avocado oil.

Place chicken skin side down and sear for 3–4 minutes until golden brown.

Repeat until all chicken pieces are seared, then set aside.

3. Build the Flavor Base

Reduce heat to medium-low.
