Cosmic Brownie Cheesecake
Ingredients
For the Brownie Crust
- 1 box (approximately 400g) fudgy brownie mix
- 50g melted butter
For the Cheesecake Filling
- 680g cream cheese, softened
- 140g granulated sugar
- 2 tsp vanilla extract
- 1 tbsp cocoa powder
- 140g sour cream, room temperature
- 3 large eggs, room temperature
- 226g semi-sweet chocolate chips
For the Chocolate Ganache
- 100g heavy cream
- 150g semi-sweet chocolate chips
For the Topping
- 1/2 cup mini candy-coated chocolates
Instructions
- Make the Brownie Crust: Preheat oven to 350°F (175°C). Grease a 9-inch springform pan. Prepare brownie mix according to package directions, then stir in melted butter. Press the brownie mixture evenly into the bottom of the prepared pan. Bake for 10 minutes, then let cool completely.
- Make the Cheesecake Filling: Beat the softened cream cheese and sugar together in a large bowl until light and fluffy. Beat in the vanilla extract and cocoa powder until combined. Add the sour cream and eggs one at a time, beating well after each addition. Finally, stir in the chocolate chips.
- Assemble the Cheesecake: Pour the cheesecake filling over the cooled brownie crust. Bake for 50-60 minutes, or until the center is just set. The cheesecake will still be a bit jiggly in the center, but it will firm up as it cools.
- Cool and Chill: Let the cheesecake cool completely at room temperature, then refrigerate for at least 4 hours, or overnight for best results.
- Make the Chocolate Ganache: Heat the heavy cream in a saucepan over medium heat until simmering. Remove from heat and pour over the chocolate chips. Let sit for 5 minutes, then whisk until smooth and glossy.
- Decorate and Serve: Once the cheesecake is chilled, pour the chocolate ganache over the top, letting it drip down the sides. Sprinkle with mini candy-coated chocolates. Slice and serve chilled.
