I made the whole thing from scratch in under 45 minutes. Perfect weeknight flex or weekend treat.
🧀 Philly Cheesesteak with Homemade Fries

⏱️ Time: ~45 minutes
🍽️ Serves: 3–4
🍟 Homemade Fries Ingredients:
- 3–4 russet potatoes, peeled
- 1 tbsp white vinegar
- 1 tbsp salt
- Ice water
- Oil for frying (vegetable, peanut, or canola)
- Cajun seasoning (or salt, pepper, garlic powder)
🧀 Cheese Sauce Ingredients:
- 1 cup whole milk
- 1 small block Velveeta cheese
- 1 cup sharp cheddar cheese, shredded
🥩 Philly Cheesesteak Ingredients:
- 1 lb thinly sliced ribeye (or 2 packs from the deli)
- 1 small sweet onion, diced
- 1 tbsp olive oil or butter
- Complete seasoning or your favorite steak blend
- 3–4 sub rolls (Publix deli bread works perfectly)
👨🍳 Instructions:
1. Make the Fries:
Peel and cut potatoes into your desired fry shape (shoestring or thicker).
Soak in cold water with vinegar, salt, and ice for 30 minutes in the fridge.
Pat fries dry and fry in two batches:
First fry: 5 minutes at 325°F
Second fry: Until golden and crispy at 375°F
Season immediately with Cajun seasoning.
2. Cheese Sauce:
In a saucepan over low heat, combine milk, Velveeta, and cheddar.
Stir until smooth and melted. Keep warm.
3. Cook the Steak & Onions:
In a skillet over medium-high, cook ribeye until fully browned.
Use spatula edge to chop into smaller pieces.
Push steak aside, add onions, and cook until caramelized (medium heat).
Mix steak and onions together, season lightly.
4. Assemble:
Slice rolls and lightly press the insides.
Mix some cheese sauce into the steak mixture, then load it into each roll.
Drizzle more cheese sauce on top for that melty finish.
