🍗 For the Chicken:
- 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tsp kosher salt
- 1 tsp white pepper
- 1 tsp Chinese five-spice (optional but delicious)
- 1 tbsp ginger paste
- 1 tbsp garlic powder
- ¼ cup cornstarch (for coating)
👩🍳 Instructions:
Season Chicken: In a large bowl, combine chicken pieces with salt, pepper, five-spice, ginger paste, garlic powder, and cornstarch. Toss until evenly coated.
Fry Chicken: Heat oil in a deep pan or wok over high heat. Fry the chicken in batches until golden and crispy. Remove and set aside on paper towels.
🍍 For the Sweet & Sour Sauce:
- ½ cup ketchup
- ½ cup rice vinegar or white vinegar
- ½ cup sugar
- 1 tbsp soy sauce
- ¼ cup water
- Slurry: 1 tbsp cornstarch + 2 tbsp water
🥄 Sauce Instructions:
In a pan, combine ketchup, vinegar, sugar, soy sauce, and water. Bring to a boil.
Stir in the slurry to thicken the sauce.
Toss the fried chicken in the sauce until fully coated and glossy.
