  • 2-3 chipotle peppers in adobo sauce, chopped finely

  • 1 ½ cups heavy cream
  • 2 ounces cream cheese, softened
  • ½ cup Parmesan cheese, freshly grated
  • 4 tablespoons olive oil, divided

Step-by-Step Instructions

  1. Cook the Rotini: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package directions until al dente. Drain the pasta and set it aside.
