📝 Ingredients

For the Steak & Veggies:

  • 2 filet mignon steaks (or any tender cut, ~6 oz each)
  • 1 tbsp Cajun seasoning
  • 1 tbsp avocado oil (or olive oil)
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup asparagus spears, trimmed
  • 1 cup corn kernels (fresh, canned, or thawed frozen)

For the Cheesy Mashed Potatoes:

  • 2 large russet potatoes, peeled and cubed
  • 3 tbsp unsalted butter
  • ¼ cup heavy cream (more if needed)
  • ½ cup shredded sharp cheddar cheese
  • Salt & pepper, to taste

For the Cowboy Butter Sauce:

  • 4 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tsp Dijon mustard
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • Pinch of red pepper flakes
  • 1 tbsp chopped fresh parsley (or chives or dill)
  • Salt, to taste

👩‍🍳 Instructions

1. Cook the Potatoes:

  • Boil cubed potatoes in salted water until fork tender, about 12–15 minutes.
  • Drain, then mash with butter, cream, cheese, salt, and pepper until creamy. Set aside and keep warm.

2. Sear the Steaks:

  • Season steaks with Cajun seasoning on both sides.
  • In a hot skillet, add avocado oil. Sear steaks for 3–4 minutes per side (or to your preferred doneness).
  • Remove excess oil from the pan.
  • Add 2 tbsp butter and 3 minced garlic cloves. Baste the steaks with the garlic butter for another 1–2 minutes.
  • Remove steaks and let rest.

3. Cook the Veggies:

  • In the same skillet with leftover garlic butter, add asparagus and corn.
  • Sauté for 4–5 minutes, until slightly charred and tender. Set aside.

4. Make Cowboy Butter:

  • In a small bowl, mix together melted butter, garlic, Dijon mustard, lemon zest, lemon juice, red pepper flakes, parsley, and a pinch of salt.
  • Stir well and set aside.

5. Assemble the Plate:

  • Plate your cheesy mashed potatoes, then top with pan-seared steak, asparagus, and corn.
  • Drizzle a generous amount of cowboy butter over everything. Garnish with extra herbs if desired.
