Roasted Cauliflower

Ingredients

  • 1 large head of cauliflower
  • 1/4 cup olive oil
  • 2 tbsp freshly squeezed lemon juice

  • 1/2 tsp ground turmeric
  • Salt and pepper to taste
  • Chopped fresh parsley or cilantro for garnish

Directions

  1. Preheat oven to 400°F (200°C).
  2. Prepare the cauliflower by removing leaves and trimming the stem to sit flat.
  3. Whisk together olive oil, lemon juice, garlic, paprika, and turmeric to make a marinade. Season with salt and pepper.
  4. Place cauliflower in a baking dish, applying the marinade evenly.
  5. Cover with foil and roast for 30 minutes, then uncover and roast for another 20-30 minutes until golden brown.
