  • 1 pound beef stew meat, cut into bite-sized pieces
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (13.5-ounce) can coconut milk
  • 1 cup beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions:

  1. Heat the vegetable oil in a large Dutch oven or pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and ginger and cook for an additional minute, or until fragrant.
  3. Stir in the curry powder, cumin, and turmeric and cook for 30 seconds, or until fragrant.
  4. Add the beef and cook until browned on all sides, about 5 minutes.
  5. Stir in the diced tomatoes, coconut milk, beef broth, soy sauce, honey, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the beef is tender.
  6. Serve the beef curry over cooked rice and garnish with fresh cilantro.

Tips

  • For a thicker curry, you can add a cornstarch slurry in the last few minutes of cooking. To make a cornstarch slurry, mix 1 tablespoon cornstarch with 2 tablespoons of water. Stir the slurry into the curry and cook until thickened.
  • If you like your curry spicier, you can add a chopped jalapeno pepper to the pot with the onion.
  • You can also add other vegetables to this curry, such as carrots, potatoes, or peas.
