- 1 pound flank steak, cut into bite-sized pieces
- ¼ cup soy sauce
- 2 tablespoons white vinegar
- 1 tablespoon sugar
- 2 cloves garlic, minced
- 1 ½ teaspoons fresh ginger, grated
- ½ teaspoon black pepper
For the Fried Rice:
- 3 cups cooked cold rice
- 1 cup frozen peas and carrots
- ½ onion, chopped
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 teaspoon oyster sauce
- 2 eggs, lightly beaten
- 1 green onion, chopped
- 2 tablespoons vegetable oil

- In a large bowl, combine the steak, soy sauce, vinegar, sugar, garlic, ginger, and pepper. Toss to coat the steak evenly. Marinate for at least 30 minutes, or up to overnight in the refrigerator for extra flavorful steak.
- Heat a large skillet or wok over medium-high heat. Add the oil and then the steak. Cook the steak for 1-2 minutes per side, or until desired doneness. Remove the steak from the pan and set aside.
- Add the chopped onion to the pan and cook until softened, about 3 minutes. Add the frozen peas and carrots and cook for an additional minute or two, until heated through.
- Push the vegetables to one side of the pan and add the eggs. Scramble the eggs until cooked through, then combine them with the vegetables.
- Add the cooked rice, soy sauce, brown sugar, and oyster sauce to the pan. Stir-fry for a few minutes, until the rice is heated through and the sauce is evenly distributed.
- Return the cooked steak to the pan and toss to combine with the fried rice.
- Serve immediately, garnished with chopped green onions.
Tips:
- For a spicier dish, add a pinch of red pepper flakes to the marinade.
- If you don’t have oyster sauce, you can substitute an additional tablespoon of soy sauce.
- Be sure to use cold, cooked rice for the best fried rice texture. Freshly cooked rice will be too moist and will result in mushy fried rice.
