Veggies & Flavor Base

  • 2 tbsp butter
  • 1 cup chopped carrots
  • 2 cups chopped broccoli
  • 1 tsp Better Than Bouillon (vegetable or chicken base)

Roux & Seasoning

  • 1 small onion, diced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp Tony’s Creole Seasoning
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp celery salt
  • ¼ tsp smoked paprika

Soup Base

  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp Better Than Bouillon
  • 2 cups shredded sharp cheddar cheese

To Serve

  • Bread bowls (store-bought or homemade)

🍲 How to Make Broccoli & Cheddar Soup in a Bread Bowl

1. Sauté the Veggies

In a large pot, melt 2 tbsp of butter over medium heat. Add carrots, broccoli, and 1 tsp of Better Than Bouillon. Let the mixture simmer for 5–7 minutes, then remove the veggies and set them aside.

2. Make the Roux

In the same pot, melt the remaining 2 tbsp of butter. Add diced onion and cook until softened. Stir in the flour and cook for 1–2 minutes, whisking continuously to form a smooth roux.

3. Season & Build the Soup

Add in all your seasonings—Tony’s Creole Seasoning, garlic powder, onion powder, celery salt, and smoked paprika. Slowly whisk in the vegetable broth, then pour in the heavy cream and another teaspoon of Better Than Bouillon.

4. Add Cheese & Blend

Stir in the shredded sharp cheddar cheese, allowing it to melt completely into the soup. For a smoother texture, blend the soup with an immersion blender or transfer to a blender in batches.

5. Finish with the Veggies

Add the cooked broccoli and carrots back into the soup. Let it simmer for 5 more minutes on low heat to combine all those rich flavors.

6. Serve in Bread Bowls

Cut the tops off your bread bowls, hollow them out, and toast lightly in the oven for a few minutes. Ladle in your creamy, cheesy soup and serve immediately. 🥣💛

💡 Pro Tips

Want a little heat? Add a dash of hot sauce or pinch of red pepper flakes.

Mix in a bit of gouda or gruyère for an extra layer of creaminess.

Toast your bread bowls for a crisp texture that holds up beautifully.
