Bourbon Chicken with Broccoli

  • 4 boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup broccoli florets
  • 3 tablespoons cornstarch, divided
  • 3 cloves garlic, minced
  • ½ cup apple juice
  • ½ cup bourbon
  • ½ cup chicken broth
  • ¼ cup soy sauce *⅓ cup brown sugar
  • ¼ cup ketchup
  • ¼ teaspoon ground ginger
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon black pepper
  • 2 teaspoons apple cider vinegar
  • 4 tablespoons vegetable oil, divided
  • Sesame seeds, for garnish (optional)

Instructions:

  1. In a large bowl, toss the chicken with 2 tablespoons of the cornstarch, seasoning with pepper. Set aside.
  2. In a separate bowl, whisk together the bourbon, broth, soy sauce, apple cider vinegar, apple juice, ketchup, brown sugar, ginger, garlic, and red pepper flakes.
  3. Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add the broccoli and cook for 5 minutes, or until tender-crisp. Remove from the pan and set aside.
  4. Add the remaining 2 tablespoons of vegetable oil to the pan. Increase the heat to medium-high and add the chicken. Cook for 3-4 minutes per side, or until golden brown and cooked through.
  5. Pour the bourbon sauce into the pan and bring to a boil. Reduce heat to low and simmer for 10-12 minutes, or until the sauce thickens and the chicken is cooked through.
  6. Stir in the cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon of water) and cook for an additional minute, or until the sauce thickens.
  7. Add the broccoli back to the pan and stir to coat.
  8. Serve immediately, garnished with sesame seeds (optional).

  • You can use chicken breasts instead of chicken thighs, but be sure to adjust the cooking time so that the chicken does not dry out.
