Bourbon Chicken with Broccoli

- 4 boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup broccoli florets
- 3 tablespoons cornstarch, divided
- 3 cloves garlic, minced
- ½ cup apple juice
- ½ cup bourbon
- ½ cup chicken broth
- ¼ cup soy sauce *⅓ cup brown sugar
- ¼ cup ketchup
- ¼ teaspoon ground ginger
- ½ teaspoon red pepper flakes
- ¼ teaspoon black pepper
- 2 teaspoons apple cider vinegar
- 4 tablespoons vegetable oil, divided
- Sesame seeds, for garnish (optional)
Instructions:
- In a large bowl, toss the chicken with 2 tablespoons of the cornstarch, seasoning with pepper. Set aside.
- In a separate bowl, whisk together the bourbon, broth, soy sauce, apple cider vinegar, apple juice, ketchup, brown sugar, ginger, garlic, and red pepper flakes.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add the broccoli and cook for 5 minutes, or until tender-crisp. Remove from the pan and set aside.
- Add the remaining 2 tablespoons of vegetable oil to the pan. Increase the heat to medium-high and add the chicken. Cook for 3-4 minutes per side, or until golden brown and cooked through.
- Pour the bourbon sauce into the pan and bring to a boil. Reduce heat to low and simmer for 10-12 minutes, or until the sauce thickens and the chicken is cooked through.
- Stir in the cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon of water) and cook for an additional minute, or until the sauce thickens.
- Add the broccoli back to the pan and stir to coat.
- Serve immediately, garnished with sesame seeds (optional).
