Instructions:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain off any excess grease.
  2. Add the onion, carrots, and garlic to the pot and cook for 5 minutes, or until the vegetables are softened.
  3. Stir in the tomato paste and cook for 1 minute more.
  4. Pour in the beef broth and bring to a boil.
  5. Add the potatoes, peas, and thyme to the pot. Reduce heat to low and simmer for 20-25 minutes, or until the potatoes are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot with a crusty bread or dinner rolls.

Tips:

  • You can use ground lamb instead of ground beef in this recipe.
  • If you don’t have frozen peas, you can use fresh peas or another type of frozen vegetable, such as corn or green beans.
  • For a thicker soup, you can mash up some of the potatoes in the pot before serving.
