Instructions:
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain off any excess grease.
- Add the onion, carrots, and garlic to the pot and cook for 5 minutes, or until the vegetables are softened.
- Stir in the tomato paste and cook for 1 minute more.
- Pour in the beef broth and bring to a boil.
- Add the potatoes, peas, and thyme to the pot. Reduce heat to low and simmer for 20-25 minutes, or until the potatoes are tender.
