🛒 Ingredients
Filling:
- 1 cup frozen hash browns (thawed)
- 2 strips cooked bacon, chopped
- 2 breakfast sausage links, cooked and crumbled
- 2 eggs, scrambled
- ½ cup shredded cheddar cheese
- Salt and pepper to taste
For Frying:
- 1 cup pancake mix
- ¾ cup water (or per box instructions)
- Vegetable oil, for frying
Toppings:
- Powdered sugar (optional)
- Maple syrup, for drizzling
🍳 Instructions
1. Make the Filling
In a bowl, mix hash browns, cooked bacon, sausage, scrambled eggs, and cheddar cheese.
Season lightly with salt and pepper.
Form into 6–8 tight balls using your hands or an ice cream scoop.
2. Freeze
Place the breakfast balls on a parchment-lined tray.
Freeze for 30–60 minutes, until firm but not rock solid.
3. Batter & Fry
Preheat oil in a deep pan to 350°F (175°C).
Prepare pancake batter in a separate bowl.
Dip each ball into the pancake batter, fully coating it.
Carefully lower into the hot oil and fry for 2–4 minutes per side, flipping once, until golden brown.
4. Drain & Top
Remove from oil and place on paper towels to drain excess oil.
Sprinkle with powdered sugar and drizzle with maple syrup.
