  • 1 (10-ounce) can cream of corn soup
  • 2 cups shredded cheddar cheese
  • 2 cups frozen tater tots

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9×13 inch baking dish.
  2. In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
  3. Stir in onion, salt, pepper, cumin, dried cilantro, chili powder, and cayenne pepper. Cook for 5 minutes, or until the onion is softened.
  4. Stir in diced tomatoes, corn, and cream of corn soup. Bring to a simmer and cook for 5 minutes.
  5. Spread the mixture in the prepared baking dish. Top with shredded cheddar cheese and frozen tater tots.
  6. Bake for 20-25 minutes, or until the tater tots are golden brown and the casserole is bubbly.

Tips:

  • For a spicier casserole, add an additional 1/4 teaspoon of cayenne pepper.
  • If you don’t have cream of corn soup, you can substitute with another can of diced tomatoes or corn.
