Preparation

  1. Preheat oven to the temperature indicated on the cake mix box and grease a 9×13-inch baking dish.
  2. Prepare the batter according to the mix directions and bake the cake for the time directed.
  3. As the cake bakes, add cream cheese, vanilla pudding mix, and milk to a large bowl and beat until smooth and starting to thicken. Chill the pudding mixture in the fridge for at least 30 minutes as the cake bakes and cools.
  4. Once the cake has cooled, use the handle of a wooden spoon to poke holes all over the cake about halfway through (but not through the bottom!).
  5. Pour the pineapple with juices over the top and gently spread it into an even layer.
  6. Spread the pudding mixture over the pineapple, then top it off with a layer of cool whip.
  7. Sprinkle coconut over the cake and chill until ready to serve.
