Prepare the Chicken:
- Cube the chicken breast into bite-sized pieces. Toss with olive oil and season with all-purpose seasoning. Set aside.
Make the Sauce:
- In a small bowl, whisk together rice vinegar, fish sauce, brown sugar, sambal chili paste, maple bourbon seasoning (if using), and honey. Set aside.
Sear the Chicken:
- Heat a griddle or large skillet over medium heat. Add a bit of oil and spread the chicken out in a single layer. Let it cook for 2-3 minutes on each side, flipping occasionally to ensure even browning.
Cook with Sauce:
- Pour the prepared sweet chili sauce onto the griddle or skillet next to the chicken. Continuously flip the chicken every minute, allowing it to absorb the sauce. Cook for an additional 5-7 minutes.
Thicken the Sauce:
- In a small bowl, mix the cornstarch with water to create a slurry. Pour the slurry into the sauce on the griddle and stir well. Allow the sauce to thicken and coat the chicken bites.
Serve and Garnish:
- Once the chicken is fully cooked, transfer to a serving bowl. Toss with any remaining sauce. Garnish with chopped green onions and sesame seeds before serving.
Notes
