Strawberry Crunch Cheesecake Recipe

Ingredients

For the Crust:

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tbsp granulated sugar

For the Filling:

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream (whipped to stiff peaks)
  • 1 cup strawberry-flavored gelatin powder (like Jell-O)
  • ½ cup sour cream

For the Topping:

  • 1 cup crushed Golden Oreos
  • 1 cup freeze-dried strawberries, crushed
  • ¼ cup unsalted butter, melted
  • Whipped cream or Cool Whip (for garnish)

Instructions

Step 1: Make the Crust

In a bowl, mix graham cracker crumbs, sugar, and melted butter until evenly coated.

Press mixture into the bottom and up the sides of a 9-inch springform pan.

Chill in the fridge for at least 30 minutes while you make the filling.

Step 2: Make the Cheesecake Filling

In a large bowl, beat softened cream cheese and sugar until smooth.

Add vanilla extract and sour cream; mix until combined.

Fold in whipped cream gently to keep the filling light and airy.

Divide the filling in half. Mix the strawberry gelatin powder into one half until fully incorporated.

Pour the strawberry filling into the crust, then layer the plain cheesecake filling on top (or swirl them together for a marbled effect).

Smooth the top with a spatula.

Step 3: Make the Strawberry Crunch Topping

In a bowl, combine crushed Golden Oreos and crushed freeze-dried strawberries.

Drizzle melted butter over the mixture and toss until evenly coated.

Step 4: Decorate & Chill

Spread a thin layer of whipped topping over the cheesecake.

Sprinkle the strawberry crunch mixture generously over the top.

Cover and chill for at least 4 hours or overnight for best texture.

Tips for Success

  • Use a food processor for a fine, even crust and crumble.
  • Chill your mixing bowl and whisk before whipping the cream — it makes stiff peaks faster.
  • For an extra pop of strawberry flavor, drizzle strawberry syrup before serving.

Serving Suggestions

  • Serve cold for the best texture.
  • Add fresh strawberries on top for a beautiful presentation.
  • Perfect with a cup of coffee or a tall glass of cold milk.
